The pre-installed version of python is NOT rubbish, it’s used by the system to do various tasks. If you delete it, it will likely mess things up. I highly recommend you leave it alone. I would recommend you do a simple web search, since there are a whole slew of guides to doing this. Try this one:
There is a list of links at the bottom with at least 5 more guides to installing “python for science” on Mac OS X 10.5 (“python for science” being the suite of iPython, SciPy, NumPy, and matplotlib). Also try this handy “SciPy Superpack” script:

It atuomatically downloads & installs the python for science programs from the svn source (so you don’t have to worry about updating, you just re-run the script).
