Has anyone had any luck plotting a Healpix (sky pixelization used in astronomy) map using matplotlib basemap... or any other python plotting package for that matter?

Jessica: I don't know anything about Healpix, but if you are more specific about what the problem is I may be able to help. For instance, how are the locations of the pixels in your image defined?
