Custom colormaps

I would like to know how to create my own colormaps. cm.jet et al. are very nice, but sometimes I need to create my own to highlight certain values in my maps. I have not found any information about this in the manual, and I don't understand how the maps are used under the hood to figure it out myself.

Any advice?
