Color schemes for XY plots?

A quick question....

So i've experimented with pcolor, and it's not really what I'm looking for. What I'm attempting to do is plot some XY coordinates, just a simple function, with the line being colored differently depending on the value of that function. So if perhaps you were plotting temperature vs time, you'd see the line change to red when it approached higher temperatures and blue when it approached lower temperatures.

Any advice as to how to do this?
